This is our custom batch from the coffee farm. The coffee farmer hand-picked the best quality coffee cherries from the farm. Then the cherries will be stored into an oxygen-free container and ready for anaerobic fermentation, which last for 72 hours and will continue for the next step which is the natural process.
The whole natural process is 7 days, the cherries will be stored into the oxygen-free container for another fermentation. After 72 hours, it will be sun dried and further fermentate for another 72 hours and until the moisture content decrease to approximately 13-14%.
